I'm trying to come at you guys pretty hard this summer with my blog game; not only am I starting What to Wear, I'm also starting What to Eat: The Summer Edition, which is me simply suggesting summer meals or dishes to try. Some dishes you'll be able to order from your local restaurant, others you may have to put in a little hand work, but I promise each of you a happy ending!
Today's post is inspired by my recent trip to Jacksonville, FL where I visited a little diner called Metro Diner and ordered the famous chicken and waffles. Now, please, don't go thinking of the typical "chicken and waffles" lazily being served in restaurants with chicken tenders and cheap syrup. No, this brunch favorite of Metro Diner's comes with a thick Belgian waffle with powdered sugar and strawberry butter, half of a whole chicken; yes, I'm talking the wing, leg, thigh, and breast; a homemade sweet and spicy sauce which combines syrup and hot sauce to make the perfect sauce to pour atop it all. I know my highlight probably shouldn't be the strawberry butter, but oh my gosh, you guys, it's perfection; I could eat it all day! Lucky for us, Martha Stewart recently released a simple 10-minute Strawberry Butter recipe to help me do just that. It's a simple recipe of butter, confectioners' sugar, and salt. For a sweeter version, substitute the confectioners' sugar with a tablespoon of granulated sugar.
If the strawberry butter isn't enough, last year, Stewart released a one-bowl buttermilk waffle that's recently been getting major online attention. It not only promises to be fluffy but guarantees to be a hit.
Here are a few more dishes we tried at Metro Diner:
Let me know if you've dined at Metro Diner or tried any of these recipes. Until next time
